The Sweet History of This Holiday Favorite

This recipe isn’t a newcomer to my collection of cherished treats. In fact, I first shared this delectable fudge back in 2013. It originated from one of the very first bloggers I connected with when I embarked on my culinary journey: Joan, the brilliant mind behind Chocolate, Chocolate and More. Her recipes have always been a source of inspiration, and this eggnog fudge quickly became a fan favorite.

For years, this white chocolate eggnog fudge has been an absolute sensation during Christmastime. Its unique flavor and perfect texture resonated deeply with everyone who tried it. However, as often happens with older blog posts, the original photos didn’t quite do justice to how truly spectacular this fudge is. Recognizing its enduring popularity and deliciousness, I decided this year was the perfect time to give it a complete recipe revamp, complete with fresh, enticing visuals!

Embracing the Eggnog Spirit: Homemade vs. Store-Bought

Have you ever considered making your own eggnog from scratch? Historically, I’ve always opted for the convenience of store-bought eggnog. It’s readily available and perfectly enjoyable. However, after diving into numerous articles and recipes praising the rich, authentic flavor of homemade eggnog, I’m absolutely convinced this year is the time to try making it from scratch. There’s something inherently rewarding about creating a core ingredient yourself, and I anticipate it will elevate this fudge to an even higher level of holiday perfection.

So, with the intention of revamping the recipe and capturing new, enticing photos, I made this delightful treat again just the other day. That very first bite confirmed it: Yep. It’s still as utterly amazing as I remember. The familiar, comforting taste of eggnog, combined with the smooth white chocolate, makes it truly irresistible.

Essential Tools for Making Perfect Eggnog Fudge:

Achieving that perfect, smooth, and creamy fudge texture is easier with the right equipment. These tools are crucial for ensuring your eggnog fudge turns out exactly as it should:

  • **A good candy thermometer:** This is non-negotiable for fudge making! It ensures you reach the precise “soft ball stage” (235 degrees Fahrenheit), which is critical for the fudge to set correctly and have that desirable smooth texture. Guessing the temperature often leads to fudge that’s too soft or too hard.
  • **A heavy medium saucepan:** A heavy-bottomed saucepan distributes heat evenly, preventing scorching and ensuring a consistent boil. This is vital when cooking sugar mixtures to specific temperatures.
  • **Either a 9×9 inch baking dish or an 8×8 inch baking dish:** The size of your pan will determine the thickness of your fudge. Either size works, just be aware that an 8×8 inch pan will yield thicker pieces. Lining it with foil and buttering it thoroughly is key for easy removal.

Making Ahead & Storage Tips

One of the best features of this Eggnog Fudge is how perfectly it lends itself to make-ahead planning. I recently prepared a batch early in the month. After allowing it to cool completely and cutting it into perfect squares, I carefully wrapped each piece in waxed paper. Then, I placed them into a freezer-safe ziplock bag. Now, it’s all ready and waiting in the freezer, making my holiday tray preparations a breeze! (YAY for getting ahead!)

This fudge stores beautifully. At room temperature, in an airtight container, it will stay fresh for up to one week. If you prefer to extend its freshness, store it in the refrigerator for up to three weeks. For longer storage, as mentioned, it freezes exceptionally well for several months, ensuring you have a delightful treat whenever the craving strikes.

Ingredients

  • 1/2 cup unsalted butter (1 stick)
  • 2 Tablespoons heavy whipping cream
  • 3/4 cup eggnog (minus 2 Tablespoons for correct consistency)
  • 2 cups granulated sugar
  • 1 11 ounce package white chocolate chips (good quality recommended)
  • 1 7 ounce jar Marshmallow Creme
  • 1/2 teaspoon ground nutmeg (plus extra for topping/garnish)
  • 2 teaspoons pure vanilla extract

Instructions

  • Prepare your baking pan by lining a 9×9 inch or 8×8 inch pan with aluminum foil, ensuring the foil extends over the edges for easy lifting. Butter the foil thoroughly. Set the prepared pan aside.
  • In a heavy-bottomed medium saucepan, combine the butter, eggnog, heavy whipping cream, and granulated sugar. Place the saucepan over medium heat. Bring the mixture to a full boil, stirring occasionally to prevent sticking and burning.
  • Once boiling, slightly reduce the heat to maintain a steady boil. Clip a candy thermometer to the side of the saucepan, ensuring the tip does not touch the bottom. Continue cooking, stirring occasionally, until the temperature reaches 235 degrees Fahrenheit (this is known as the soft-ball stage). Immediately remove the saucepan from the heat. Stir in the white chocolate chips. Continue stirring until the white chocolate is completely melted and smoothly blended into the mixture. Add the marshmallow creme, 1/2 teaspoon nutmeg, and vanilla extract. Stir vigorously until the mixture is completely smooth and uniform. Spread the hot fudge evenly into your prepared pan.
  • For a beautiful finish, garnish the top with a light dusting of additional nutmeg. Allow the fudge to cool completely at room temperature, which can take several hours, before attempting to remove it from the pan. Once fully cooled and firm, use the foil overhangs to lift the fudge out of the pan. Cut it into desired squares. Store the fudge in an airtight container at room temperature for up to one week, or in the refrigerator for up to three weeks. This fudge also freezes exceptionally well for longer storage.
