Are you a fan of gingersnaps? I certainly am! While traditional gingersnaps are typically hard and crunchy, ideal for dunking into a warm cup of coffee or tea, these spice cookies offer a delightful twist. They are incredibly soft and wonderfully chewy, making them utterly irresistible. Don’t get me wrong, they are still absolutely perfect for dunking, but their tender texture truly sets them apart. I originally baked a large batch with the intention of sharing them widely, but their addictive quality made it a challenge to give them away! I found myself constantly reaching for “just one more.” They have that perfect balance of warm spices – cinnamon, ginger, cloves – that makes them a quintessential fall cookie. The aroma alone is enough to fill your home with comforting autumn cheer.

For this particular batch, I opted to make the cookies slightly larger than my usual size, closer to a traditional gingersnap in dimension. This size yields a more substantial bite, perfect for dipping. Even with this larger size, I was able to bake an impressive six dozen cookies, making them ideal for entertaining a crowd or simply stocking up for future cravings. This is my sweet great-nephew, Hunter. Ingredients

Cookie Ingredients

  • 1 1/2 cups butter softened
  • 2 cups sugar
  • 2 eggs
  • 1/2 cup molasses
  • 4 cups flour
  • 4 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon cloves
  • 1 teaspoon salt
  • additional sugar for rolling dough

Pumpkin Dip Ingredients

  • 4 ounces Cream Cheese softened
  • 1 1/4 cup canned Pumpkin
  • 1 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger

Instructions

  • To make the cookies: Cream butter and sugar then add eggs one at a time, beating well after each one. Add molasses, mix well.
  • Combine dry ingredients and add to creamed mixture, mix well and chill overnight.
  • Shape into ½ inch balls and roll in sugar, place 2′ apart on an ungreased baking sheet. Bake at 350 degrees for 6 minutes or until edges begin to brown.
  • Do Not over bake, or they won’t be chewy. Cool 2 minutes before removing to cooling rack.
  • To make the dip: , cream the cream cheese with a mixer until smooth. Add pumpkin and beat well. Add dry ingredients and beat until smooth.
