A Culinary Reunion: Revisiting the Secret Recipe Club!

Back in the day, I had the pleasure of participating in a wonderful online community called Secret Recipe Club. Each month, members were assigned a mystery blog to cook or bake from. On a designated “reveal day,” usually a Monday, we would all simultaneously share our chosen recipes and discover who had been assigned our own blog and what delicious dish they prepared. It was always an exciting and fun way to explore new blogs and try different recipes. As with many good things, the club eventually came to an end, but the memories and culinary discoveries have stayed with me.

This month, however, we’re having a special reunion! I was thrilled to be assigned the blog Cheese Curd In Paradise. Ashley, the talented blogger behind it, runs a truly inspiring site that is absolutely packed with so many mouth-watering recipes it will make your head spin! Her blog is truly after my own heart – Ashley has a little bit of everything on her site, from comforting casseroles to sweet treats and refreshing drinks. You’ll definitely need to pull up a chair and allot yourself some time once you start scrolling through her fantastic archives!

Funnily enough, I had actually been assigned this blog before. On that occasion, I made Ashley’s Hawaiian Chicken BBQ Sandwiches in a Crockpot, which were absolutely delicious and became a family favorite. Ingredients

  • 1 head fresh cauliflower cut into bite-sized pieces, about 5 cups
  • 1 cup sour cream (full-fat recommended for best creaminess)
  • 2 cups shredded cheddar cheese divided (use sharp cheddar for more flavor)
  • 3 scallions thinly sliced, divided (green onions)
  • 6 slices bacon cooked until crisp and crumbled, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh cracked black pepper
  • Non-stick cooking spray (for the casserole dish)

Instructions

  • Preheat oven to 350°F (175°C). Lightly spray a medium-sized casserole dish (about 9×13 inch) with non-stick cooking spray.
  • Cut the fresh cauliflower into bite-sized florets. Steam the cauliflower until it is just tender when pierced with a fork, but still holds its shape (do not overcook). Drain any excess water thoroughly.
  • In a large bowl, combine the steamed cauliflower, sour cream, half of the crumbled bacon, half of the sliced scallions, and half of the shredded cheddar cheese. Season with salt and pepper. Stir gently to combine all ingredients evenly.
  • Transfer the mixture to the prepared casserole dish and spread it evenly. Sprinkle the remaining half of the shredded cheddar cheese over the top of the casserole.
  • Bake for 18-20 minutes, or until the casserole is heated through and the cheese on top is melted, bubbly, and lightly golden.
