Not only is it National Reuben Month, but you might also find yourself with a delightful bonus: leftover corned beef from your traditional St. Patrick’s Day corned beef and cabbage feast. If you’re fortunate enough to have extra, this recipe is a fantastic way to give it a delicious new life! In fact, I highly recommend picking up some extra corned beef intentionally – you’ll thank yourself later when you’re craving this savory casserole.
That very Reuben Sandwich pictured above recently graced the pages of Nebraska Life Magazine in their March/April 2021 issue. I was absolutely thrilled and honored to see one of my all-time favorite recipes featured in print!

Many of these have been creative and fun twists on the classic Reuben Sandwich. A while back, I coined the term “Reubenizing” recipes to describe this process, and the phrase has certainly stuck! There’s no waiting 8 hours for flavors to meld or bread to soak. You simply layer the ingredients, pop it in the oven, and within less than an hour, a piping hot, flavorful Reuben casserole is ready to grace your table. - Step 5: Prepare the Eggs. In a separate bowl, crack your eggs. Add the caraway seeds and a generous pinch of black pepper. Beat the eggs thoroughly until the yolks and whites are fully combined and slightly frothy. This ensures a uniform custard-like texture in your baked casserole.

- Step 6: Layer Sauerkraut and Eggs. Evenly spread the well-drained sauerkraut over the corned beef layer. Draining is key to prevent a soggy casserole. Then, pour the beaten egg mixture carefully and evenly over the sauerkraut.
- Step 7: Top with Cheese. Generously sprinkle the shredded Swiss cheese over the top of the egg layer. This will melt into a golden, bubbly crust during baking.
- Step 8: Bake and Rest. Place the baking dish into your preheated oven and bake for approximately 30 minutes, or until the eggs are set and the cheese is golden and bubbly. Once baked, remove the casserole from the oven and let it rest for about 10 minutes before slicing. This resting period allows the casserole to set further, making it easier to cut into neat squares. For an extra touch of freshness and color, garnish with fresh parsley if desired before serving.

Storage Tips: Any delicious leftovers can be stored, covered, in the fridge for up to 3 days. Simply reheat individual portions in the microwave or oven until warmed through.

Reuben Breakfast Casserole with Crescent Rolls

9×13 Pyrex Baking Dish with a Lid

Franks Kraut, Shredded, Canned, 14-Ounce (Pack of 24)
Ingredients
- 1 package Pillsbury crescent rolls sheets
- 2 Tablespoons Thousand Island dressing
- 2 cups corned beef shredded or diced small
- 2/3 cup Frank’s Kraut drained (rinse if desired)
- 6 eggs beaten
- 1/4 teaspoon black pepper
- 1/4 teaspoon caraway seeds
- 1 7 ounce package Swiss cheese, shredded (about 2 cups)
- fresh parsley for garnish if desired
Instructions

Preheat oven to 350 degrees. Spray a 9×13 baking dish with non-stick cooking spray, set aside.

Spread the crescent roll dough into the bottom of the baking dish.

Spread the Thousand Island dressing over the top of the dough.

Top with corned beef then drained sauerkraut.

Add caraway and pepper to beaten eggs, pour over the top.
