Italian Chicken Noodle Soup
Ingredients
- 1 1/2 pounds lean chicken breast meat cubed
- 4 Tablespoons butter
- 1 large onion chopped
- 4 cloves garlic minced
- 1/2 teaspoon celery seed
- Salt & Pepper to taste
- 2 teaspoons Italian seasoning I use Mrs. Dash Tomato, Basil and Garlic Seasoning
- 2 14.5 ounce cans petite diced tomatoes
- 1 1/2- 2 Quarts Chicken Stock
- 4 sprigs fresh oregano
- 1 16 ounce package frozen egg noodles
- 1/2 cup fresh basil chopped
- Fresh Parmesan cheese grated
Instructions

In a large dutch oven, melt butter and add in chicken, onion and garlic. Saute until chicken is cooked through.

Sprinkle with celery seed, Italian seasoning, Salt & Pepper. Add in tomatoes and chicken stock.

Drop sprigs of oregano into the pot. Bring to a boil. Cover and simmer for 30 minutes.

Cook your egg noodles according to package instructions. Chop basil and grate Parmesan cheese.

Remove oregano sprigs from soup pot. Add noodles in. Stir. Before serving sprinkle with fresh basil. Scoop into bowls and serve with fresh grated Parmesan cheese if desired.
