Beef & Kraut Tater Tot Casserole
Ingredients
- 1 pound lean ground beef
- 3/4 cup chopped yellow onion
- 1 cup shredded carrots
- 1 14.5 ounce can Frank’s Kraut, thoroughly drained and rinsed
- 1 10.5 ounce can cream of celery soup
- 1 8 ounce package shredded Swiss cheese
- 1 32 ounce package frozen tater tots
- Tops of 4 green onions sliced, for garnish
- Salt and freshly ground black pepper to taste
Instructions

Preheat your oven to 350 degrees F (175 degrees C).

In a large, oven-safe skillet (preferably cast iron for easy transfer), brown the lean ground beef over medium-high heat. Add the chopped onion and shredded carrots to the skillet while the beef cooks, stirring occasionally until the beef is fully browned and the vegetables are softened, about 7-10 minutes. Season generously with salt and freshly ground black pepper to taste. Once cooked, drain any excess grease from the skillet.
