  • 12 ounces (1 1/2 cups) Half & Half
  • 12 ounce jar Cheez Whiz
  • 12 ounce light beer (pour it a little ahead so it’s a bit flat)
  • 12 ounces (1 1/2 cups) beef broth
  • 6 Tablespoons unsalted butter
  • 6 Tablespoons all-purpose flour
  • 1 pound package pasta (prepared, e.g., Cavatappi)
  • Bacon for topping (if desired)

Instructions

  1. In a small pan, melt butter for about 2 minutes. Do not let it brown. Add in flour to form a roux, stirring constantly until smooth.
  2. In a medium-sized sauce pan, over medium heat, gently heat the Half & Half, Cheez Whiz, beer, and beef broth, stirring constantly. When the sauce reaches approximately 140 degrees F (60 degrees C), add the prepared roux. Continue cooking, stirring constantly, until the sauce reaches 160 degrees F (71 degrees C). Do NOT let it come to a boil, as this can cause it to curdle.
  3. Serve immediately over your prepared pasta, topped with crispy bacon crumbles if desired.
