- 1 cup mashed ripe bananas (about 3 medium sized bananas)
- 2 large eggs
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 2 Tablespoons milk
- 1 teaspoon vanilla extract
- ~~For the Spiced Sugar Coating~~
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves

Preheat your oven to 350°F (175°C), and lightly spray two non-stick six-unit doughnut pans with baking spray.

In a large mixing bowl, whisk together all of the dry donut ingredients (flour, baking powder, salt, baking soda, nutmeg, cinnamon) until well combined. In a separate medium bowl, whisk together all of the wet ingredients (mashed bananas, eggs, sugar, vegetable oil, milk, vanilla). Pour the wet ingredients into the dry ingredients, and stir gently until just combined. Be careful not to overmix the batter; a few lumps are fine.

Carefully spoon or pipe the batter into the prepared donut pans, filling each cavity about three-quarters full. For easier filling, you can transfer the batter to a piping bag or a Ziploc bag with a corner snipped off.

Bake for 12-14 minutes, or until a toothpick inserted into the center of a donut comes out clean. The donuts should be golden brown and springy to the touch.
