This year, my candy-making endeavors became significantly easier and more precise thanks to my Thermapen Mk4. I had always associated this instant-read thermometer primarily with cooking meats, so I was genuinely amazed at how perfectly it adapted to candy making. Its instantaneous and highly accurate temperature readings are truly a game-changer, eliminating all the guesswork and frustration previously associated with achieving the exact soft ball stage.

Gone are the days of trying to awkwardly clip a thermometer to the side of the pan, constantly adjusting it to ensure it wasn’t touching the bottom but was still immersed deeply enough in the candy to get an accurate reading. With the Thermapen, I simply dipped it into the candy mixture every so often for an instant temperature check. The moment it registered 236 degrees Fahrenheit, I knew it was time to swiftly remove the saucepan from the heat, confident that I had hit the perfect stage.

Once your fudge mixture reaches the ideal temperature and is removed from the heat, speed is key! Make sure you have your marshmallow cream and your chosen semi-sweet chocolate chips pre-measured and ready to be incorporated immediately. This ensures a smooth and seamless transition into the next crucial step of the recipe, guaranteeing the best possible texture for your fudge.

Without delay, add the chocolate chips and the marshmallow cream directly into the still-warm cooked mixture. Stir vigorously and continuously until both the chocolate chips and the marshmallow cream are completely melted and smoothly integrated into the fudge. This swift and thorough mixing is what creates that incredibly smooth, non-grainy texture that our Never Fail Fudge is famous for.

Once thoroughly mixed and perfectly smooth, the luscious fudge is ready to be poured into your prepared 9×13 inch pan. It’s crucial to line your baking dish with buttered parchment paper before you begin. This simple step is absolutely essential for easy removal and clean-up, ensuring that your beautiful fudge can be effortlessly lifted out once set, without sticking to the pan.

Carefully spread the warm fudge evenly across the entire surface of the prepared pan, ensuring a consistent thickness for all your pieces. Once spread, place the pan into the refrigerator and chill until the fudge is completely set. This usually takes a couple of hours, allowing the fudge to firm up beautifully and develop its perfect texture.

Once fully chilled and firm, gently lift the fudge out of the pan by pulling up on the edges of the parchment paper. Transfer the entire block of fudge onto a clean cutting board. Carefully peel away the parchment paper, and then use a sharp knife to cut the fudge into perfect squares. From a 9×13 inch pan, I typically yield around 63 generously sized pieces. However, you have complete control over the portion size – you could easily cut smaller pieces to make your delicious batch go a long, long way, perfect for sharing at parties or gifting.

Ingredients
- 3 1/4 cups granulated sugar
- 1 cup cream
- 1/4 cup milk
- 1 stick of butter
- 1 7 ounce container marshmallow fluff
- 1 12 ounce package semi sweet chocolate chips
- 1 cup nuts optional
Instructions

Line a 9×13 baking dish with buttered parchment paper. Set aside.

In a good sized sauce pan, heat butter, sugar, milk and cream. Stir frequently and watch closely. When temperature reaches 236 degrees F (medium soft ball stage) remove it from the heat.

Stir in marshmallow fluff and chocolate chips until smooth.

Spread into prepared pan.

Chill for a couple of hours in the fridge, until set.

Remove by lifting the edges of the parchment. Remove paper and cut into squares. Store in a cool place. Can be frozen in an airtight container.
