  • Preheat oven to 350 degrees F (175 C). Place walnuts on a baking sheet and bake for about 8 minutes, stirring every couple of minutes. Walnuts are done when they become fragrant and golden brown. Cool walnuts completely before adding them to a food processor and chopping them until fine, but not over-processed.
  • In a medium bowl, combine the chocolate cookie crumbs, ground walnuts, cocoa powder and powdered sugar. Stir in bourbon until thoroughly combined and a cohesive mixture forms.
  • Moisten your hands with cold water to prevent the dough from sticking. Shape the mixture into uniform balls, approximately 3/4″ to 1 1/2″ in diameter (I crafted twelve 1 1/2″ balls for this recipe). Place them on a parchment-lined sheet and cover lightly with plastic wrap.
  • Chill the bourbon balls in the refrigerator for at least 8 hours or, for best results, overnight. This chilling time is essential for the flavors to meld and the balls to firm up.
  • To coat with melted chocolate, combine bittersweet chocolate baking chips and shortening in a microwave-safe bowl. Microwave in 30-second intervals, stirring until smooth and fully melted.
