However, my mind soon turned to appetizers, and it quickly settled on the beloved concept of stuffed mushrooms. It’s certainly no secret how much I adore cooking with mushrooms! Among my family of six, there was one child, my oldest, who wasn’t particularly fond of them. For almost 23 years, he skillfully managed to pick them out of his food.

That all changed recently, however, after another gentle reminder to “try them, you might actually like them.” To my delight, I now have another mushroom eater in the family! It just goes to show how our tastes can evolve as we grow and mature. My mom’s broccoli stuffed mushrooms are a Christmas Eve tradition, and there’s always a playful rush to the plate when they emerge from the oven. This year, I thought it would be wonderful to introduce a new, equally irresistible option – a savory seafood variation.

Simple Steps to Perfectly Stuffed Mushrooms

Crafting these little beauties does involve a bit of preparation, but the effort is well worth it. Once they are prepped, you have the flexibility to either bake and serve them immediately or store them in the fridge until you’re ready to entertain. For this recipe, I chose versatile Baby Bella mushrooms, known for their earthy flavor and sturdy texture. However, white button mushrooms would also work wonderfully if that’s your preference. The first step is to carefully remove the stems and gently hollow out each mushroom cap. A strawberry huller works exceptionally well for this task, making the process quick and efficient. Be sure to finely chop the mushroom stems and the hollowed-out middles; these will be incorporated into our flavorful stuffing mixture.

Next, finely chop your Simply Surimi seafood, ensuring uniform pieces that will blend seamlessly with the other ingredients. Complement this with finely diced red or orange bell pepper for a pop of color and subtle sweetness, along with a small amount of sweet onion, adding a crucial aromatic depth to the stuffing.

Now, it’s time to build the filling. In a sturdy cast iron skillet, melt a generous portion of butter over medium heat. Add the chopped sweet onion and bell pepper, sautéing them for about five minutes until they begin to soften. Introduce the minced garlic and the reserved chopped mushroom pieces, continuing to cook until the onions become translucent and the mushrooms release their moisture. Stir in the chopped Simply Surimi seafood, then generously sprinkle with classic Old Bay Seasoning, a touch of salt, and freshly ground black pepper. Give the mixture a good stir to combine all the flavors and heat through. Remove the skillet from the heat and stir in the seasoned breadcrumbs and a heaping cup of shredded smoked Gouda cheese. The Gouda adds a wonderful creamy texture and a rich, smoky note that elevates the entire dish.

Transfer the delectable filling to a bowl and quickly wipe down the skillet with a paper towel – you’ll be using it again for baking. This minimal cleaning ensures no residual bits will burn while the mushrooms bake.

Carefully scoop the flavorful filling into each hollowed-out mushroom cap. Make sure to press the filling down gently inside, then create a small mound on top, showcasing the generous amount of delicious stuffing. Arrange the stuffed mushrooms back into your cleaned cast iron skillet. Dot the remaining bits of butter evenly throughout the pan, which will help create a beautiful golden crust and add richness during baking.

Place the skillet into your preheated oven and bake for approximately 20 minutes, or until the mushrooms are tender and the stuffing is beautifully golden brown and bubbly. Ingredients

  • One Pound Baby Bella Mushrooms washed well, stems removed and centers hollowed (about 30)
  • 6 ounces Simply Surimi Seafood
  • 1/3 cup sweet onion chopped
  • 1/3 cup red or orange bell pepper chopped
  • 4 cloves garlic minced
  • 1/3 cup seasoned breadcrumbs
  • 1/3 heaping cup Smoked Gouda cheese shredded
  • 4 Tablespoons butter divided
  • 2 teaspoons Old Bay Seasoning
  • Salt and Pepper to taste
  • Sliced green onions for serving.

Instructions

  • Preheat oven to 350 degrees Fahrenheit (175°C).
  • Place about 1 Tablespoon of butter in a cast iron skillet over medium heat to melt. Add in chopped bell peppers and sweet onion and sauté for about 5 minutes until they begin to soften. Add in minced garlic and the chopped mushroom pieces (from the stems and hollowed centers) and continue to sauté for about another 5 minutes, or until the onions are translucent and the mushrooms are tender. Add in the Simply Surimi Seafood, sprinkle generously with Old Bay Seasoning, and add salt and pepper to taste. Stir until heated through and well combined. Remove the skillet from the heat.
  • Stir in the seasoned breadcrumbs and the shredded smoked Gouda cheese into the seafood mixture. Mix thoroughly. Remove the stuffing from the pan and set aside. Give the skillet a quick wipe down with a paper towel to clean it for baking.
  • Arrange the hollowed-out mushroom caps in the cleaned skillet. Carefully stuff each mushroom with the prepared filling, pressing it down firmly inside the cap and leaving a generous mound of stuffing on top. Divide the remaining butter into small bits and scatter them evenly around the pan and over the stuffed mushrooms.
  • Place the skillet in the preheated oven and bake for 20 minutes, or until the mushrooms are tender and the stuffing is golden brown and bubbly.
  • Remove from the oven. Sprinkle generously with freshly sliced green onions before serving. These are delicious served hot, either directly from the skillet or elegantly plated.
  • Enjoy while hot for the best flavor and texture.

Notes

This recipe can be prepared ahead of time and baked later. If baking directly from the fridge, you may need to adjust the baking time slightly (add 5-10 minutes) to ensure they are heated through and golden.
