Ingredients

  • 1 16 ounce package cauliflower rice (about 4 cups, fresh or frozen)
  • 4 Tablespoons Sesame Oil (divided)
  • 6 green onions (tops and bottoms sliced, separated)
  • 2 cloves garlic (minced)
  • 3/4 cup frozen peas and carrots blend
  • 1 large egg (or 1 egg white, optional)
  • 1/4 cup low sodium soy sauce (or Tamari for gluten-free)

Instructions

  • Heat a large skillet or wok over high heat. Add 3 tablespoons of sesame oil. Once shimmering, add the white parts of the green onions and the minced garlic. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.
  • Add the cauliflower rice and soy sauce to the pan. Cook for approximately 5-7 minutes, stirring occasionally, until the cauliflower is tender-crisp and has absorbed some of the soy sauce flavor. Avoid overcooking to prevent it from becoming mushy.
  • Towards the end of the cauliflower cooking time (last 2-3 minutes), stir in the frozen peas and carrots blend. Continue to cook, stirring, until the vegetables are heated through and vibrant in color.
  • Create a cleared space in the pan by pushing the cauliflower mixture to one side. Add the remaining 1 tablespoon of sesame oil to the empty side of the pan. Crack the egg directly into this space and quickly scramble it until fully cooked. Once cooked, incorporate the scrambled egg into the rest of the cauliflower and vegetable mixture.
