For this particular round, I was incredibly fortunate to be assigned the esteemed blog, LeMoine Family Kitchen, the brilliant creation of Angela LeMoine. This wasn’t my first delightful encounter with Angela’s culinary genius; I’ve had the distinct pleasure of preparing two of her spectacular Italian recipes in previous rounds. I simply couldn’t bear to be left out of the deliciousness, so I made it too! The foundation of the cake recipe remained largely unchanged, a testament to its inherent deliciousness. My primary alteration to the cake itself was swapping out vanilla yogurt for a rich blueberry yogurt, intensifying that wonderful berry flavor throughout the cake.

Now, let me share a little secret among friends: when it comes to crafting perfect layer cakes, I confess they often pose a challenge for me. Despite my best efforts, they frequently lean, looking as if they’re about to topple over! So, for simplicity and a reliably beautiful presentation, I opted for my trusty bundt pan. The elegant shape of a bundt cake makes it inherently forgiving and always impressive. This versatile cake would also be absolutely delightful baked in a classic 9×13 baking dish if you prefer a sheet cake format.

My other significant changes were to the toppings. Instead of a caramel drizzle, I bathed the warm bundt cake in a glorious vanilla glaze, giving it that irresistible, giant donut-like sheen. Then, to truly highlight the blueberry theme, I generously frosted it with a homemade blueberry buttercream, creating a cohesive and intensely flavorful dessert that’s bursting with berry goodness.

To achieve the perfect bundt cake, remember these vital tips: ensure your bundt pan is meticulously greased and floured (or use a good non-stick spray with flour) to prevent sticking. Don’t overmix the batter once the dry ingredients are added, as this can lead to a tough cake. And always cool the cake in the pan for about 10-15 minutes before inverting it onto a wire rack to cool completely. This prevents it from breaking and allows it to set properly.

While my decorating skills might not put them out of business any time soon, I can confidently say that the frosting itself tasted absolutely phenomenal!

I discovered this fantastic recipe online and decided it was the perfect complement. The secret to its vibrant color and deep flavor lies in a luscious blueberry puree, made from fresh blueberries cooked down to a rich reduction. Just look at that gorgeous hue!

Once the puree is cooled, it’s whipped vigorously with softened butter and powdered sugar until it transforms into a light, airy, and incredibly fluffy frosting. The process is straightforward: first, cook the blueberries with a touch of lemon juice until they break down into a thick reduction. Strain this mixture to remove any skins, ensuring a silky-smooth puree. Once cooled, this vibrant puree is blended with creamy butter, powdered sugar, and a hint of cream and salt to create a balanced and utterly delicious frosting.

If you have a cake decorator with various piping tips, feel free to get creative. However, for a simple yet effective approach, just spoon the frosting into a gallon-sized ziplock bag, snip off one of the corners, and pipe it directly onto the cake. This method works beautifully for creating delightful swirls or dollops. To finish, I adorned the cake with even more fresh blueberries, adding a final touch of beauty and a burst of fresh fruit flavor with every bite.

Ingredients

For the Cake

  • 6 ripe bananas
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 cup blueberry yogurt
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 4 Tablespoons butter softened
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • dash of salt
  • 1 1/2 cups fresh blueberries tossed in 1/4 cup flour

For the Vanilla Glaze

  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1 Tablespoon milk

For the Blueberry Buttercream Frosting

  • 1 1/2 cups fresh blueberries
  • 2 Tablespoons lemon juice
  • 2 sticks 1 cup of butter, very soft
  • 1/2 teaspoon salt
  • 3 1/2 cups powdered sugar
  • 1-2 Tablespoons cream
  • 1/2 cup fresh blueberries for decorating

Instructions

  • PREPARE THE FROSTING: Combine blueberries and lemon juice in a saucepan over medium heat. Cook, stirring them constantly and smashing them as you stir. In about 10 minutes you will have a dark blueberry reduction.
  • Take the blueberry reduction and strain it through a fine mesh strainer. You will need to push it through, using a scraping motion to get all of it through. Discard the large chunks left in the strainer and cool the puree completely before moving on to the next step.
  • Place the softened butter in the bowl of your mixer. Beat the butter on medium high for 2 minutes to get it nice and smooth. Add in 1/4 cup blueberry puree and beat again for 1 minute.
  • Add in the powdered sugar one cup at a time on low speed. After the sugar is all mixed in, add in the cream and the salt and beat the frosting on high for 2 minutes more. The frosting will be nice and fluffy!
  • PREPARE THE CAKE: Preheat oven to 350 degrees, and spray your bundt pan with non-stick cooking spray. Set aside.
  • Add ripe bananas to a small bowl and “mash” them with your mixer. Add in eggs, vanilla and yogurt and mix to combine.
  • In another bowl, cream together softened butter with both the granulated sugar and the brown sugar. Add banana mixture to sugar mixture and mix well.
  • Toss blueberries with flour set aside.
  • Sift flour, baking powder, baking soda and salt into another bowl. Add flour mixture to wet mixture little by little mixing to combine.
  • Fold in floured blueberries by hand. Pour into the prepared bundt cake pan.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Cool slightly before inverting cake onto a plate.
  • PREPARE GLAZE: mix powdered sugar, vanilla and milk together. Drizzle over warm cake. Cool.
  • Pipe the frosting onto the cake using a cake decorator or a gallon sized ziplock bag with the corner cut off.
  • Garnish with fresh blueberries.
  • Keep any uneaten cake in the refrigerator.

Notes

Tip: I make my frosting first because it has a bit of a cooling period.

Frozen blueberries can be used for the cake and the frosting if fresh cannot be found. If using in the cake be sure to thaw and drain the liquid from them. You will want to increase the flour a bit that you toss them in, to 1/3 cup. Frozen blueberries in the frosting: do not thaw before making the blueberry puree.
