It was during this round of “Freaky Friday” that I was assigned Madi’s fantastic page, and I instantly knew what I had to make! Her array of mug cake recipes immediately caught my eye, promising both simplicity and deliciousness.

What is Freaky Friday?

For those unfamiliar, “Freaky Friday” is a wonderful group I have the pleasure of hosting, comprised of an incredibly talented community of food blogger friends. Five times a year, we participate in a fun and exciting secret blog swap. Each participant is secretly assigned another blogger’s website, from which they must cook or bake a recipe. The entire process is kept under wraps until a chosen Friday, when we all simultaneously reveal the recipes we’ve made. It’s an absolute blast for everyone involved – we all get a kick out of discovering who had our blog and which recipe they chose to create. And for the person doing the cooking, it’s a delightful challenge (and sometimes a delightfully difficult decision!) to select just one recipe from a fellow blogger’s impressive repertoire. This time was no different, as Madi’s site offered so many enticing options.

Even though I was set on making a mug cake, the real challenge was deciding *which* mug cake to choose – Madi currently boasts a collection of ten different varieties! In the end, I couldn’t resist making two: her incredible Vanilla Mug Cake and, of course, this delightful Coconut Mug Cake. I let my youngest daughter have the honors of picking which one would be featured today. Beyond the mug cakes, I dedicated a good deal of time to thoroughly exploring Madi’s site. She features some truly amazing Asian-inspired recipes and is an absolute master of Udon dishes. Her Japanese Cucumber Salad (Sunomono) is definitely on my “must-make” list for the very near future! Regardless of your coconut or sugar choice, this cake consistently turns out incredibly moist, with a wonderfully tender crumb. It’s absolutely packed with delicious coconut flavor, from the cake itself all the way to the delightful topping.

For ultimate convenience, I used canned whipped cream, which truly simplifies the topping process. However, if you’re feeling a little extra ambitious and want to elevate the flavor even further, I highly recommend making your own homemade whipped cream and adding a dash of coconut extract to it. The infused coconut flavor takes the experience to another level – YUM! In fact, one of my all-time favorite frostings I’ve ever created is my very own Coconut Cream Cheese Whipped Cream Frosting! It’s so incredibly delicious, it’s a challenge not to sneak spoonfuls before it even makes it onto the cake.

Don’t be intimidated by toasting coconut; it’s surprisingly simple and adds such a crucial element of flavor and crunch, so please don’t skip this step! While I have a dedicated How To Toast Coconut post with detailed instructions, the basic method is incredibly easy: just toss a healthy pinch of your preferred coconut flakes (sweetened or unsweetened) into a small, dry skillet set over low heat. Keep a close eye on it, stirring frequently, as coconut can go from perfectly golden to burnt in a blink. I often toast my coconut while I’m mixing up the cake batter and microwaving the cake itself. This way, it’s ready to sprinkle on top right when the whipped cream goes on. Of course, if you’re planning ahead – perhaps for that cozy date night we discussed earlier – you can toast the coconut in advance and store it in an airtight container for later use. The slightly caramelized flavor and crisp texture of toasted coconut truly elevate this simple mug cake from good to absolutely phenomenal.

Ingredients

  • 1/4 cup all-purpose flour
  • 2 Tablespoons granulated sugar
  • 2 Tablespoons sweetened shredded coconut (or unsweetened for less sweetness)
  • 1/4 teaspoon baking powder
  • 1/4 cup skim milk (or any milk of choice)
  • 2 Tablespoons butter melted
  • 1/2 teaspoon coconut extract

Instructions

  • In a small bowl, melt the butter in the microwave for about 15-20 seconds.
  • To the melted butter, whisk in the flour, baking powder, coconut flakes, sugar, coconut extract, and milk until just combined and smooth. Be careful not to overmix.
  • Pour the batter into your favorite microwave-safe mug. Place the mug in the microwave and cook for 1 1/2 to 2 minutes. Cooking time can vary; start with 90 seconds and add 15-second intervals until a toothpick inserted into the center comes out clean. (Mine was perfectly done in a minute and a half).
  • Let the mug cake cool slightly in the mug for a minute or two. Then, top generously with whipped cream (or a scoop of ice cream) and a sprinkle of toasted coconut for the ultimate experience.

Notes

You can cut back on the sugar by simply reducing the amount, or by using honey or a sugar substitute in place of granulated sugar. Using unsweetened coconut flakes will also reduce the sweetness. The cake is also delicious with Vanilla Almond milk!

Toasted Coconut and Whipped cream or ice cream for serving are optional but highly recommended for an elevated dessert experience!
