In the early 80s, Gary, the visionary founder, opened his very own Philly Cheese Steak restaurant, affectionately named the Chartoose Caboose. As a proud Nebraska native and a child of the 80s, I remember this establishment quite well!

Throughout that vibrant decade, his franchises expanded into five different states. During this time of growth, Gary ingeniously developed a method for slicing and portioning a quick-release Philly Steak Meat product, which became famously known as the Steak-EZE* Puck. Recognizing the immense potential of his innovation, Gary made a strategic decision. He sold his franchise and dedicated his time and energy to processing and selling his legendary Quick Release Puck to the food service industry, not just across the United States, but also into Canada and Mexico. This dedication culminated in him acquiring a patent for his unique product in 1992.

Even after a brief retirement in 1998, Gary’s entrepreneurial spirit and passion for sharing his delicious Philly Cheese Steaks with everyone simply couldn’t be contained. In 2002, he embarked on a new venture, opening a place you may very well have heard of: PepperJax Grill! During his impressive 14 years of owning PepperJax, Gary also founded Glenn Valley Foods, which serves as the proud parent company of our beloved Gary’s QuickSteak. And that, dear friends, brings us to the present day, where I have the wonderful opportunity to tell you all about this incredibly delicious and convenient steak that has become an indispensable shortcut in so many recipes right here in my own kitchen!

While this luxurious soup is absolutely delightful served in a regular bowl, perhaps with a crusty slice of bread on the side to meticulously mop up every last drop of its deliciousness, for an truly exceptional experience, I highly recommend going all out and serving it up in a magnificent bread bowl! The bread bowl not only adds a wonderful textural element but also makes for an impressive presentation.

Although I’m not a Keto diet expert, I know many people adhere to the Ketosis way of eating. This recipe, with a simple adjustment, can be easily adapted for that lifestyle: simply omit the bread bowl. The soup itself, with its rich steak, vegetables, and creamy cheesy broth, is quite amenable to a lower-carb approach.

Ingredients

  • 2 packages Gary’s QuickSteak + WOW seasoning packets
  • 3 medium sized green bell peppers chopped
  • 1 medium sweet yellow onion chopped
  • 1 8 ounce package white mushrooms, chopped
  • 4 Tablespoon salted butter
  • 2 – 3 cloves garlic minced
  • 2 32 ounce cartons beef stock
  • 2 bay leaves
  • Fresh cracked pepper
  • 2 beef bouillon cubes
  • 1/3 cup corn starch dissolved in 1/3 cup water
  • 8 ounces provolone cheese shredded
  • 1 ½ cups heavy cream
  • Bread bowls for serving optional
  • Additional shredded Provolone for serving.

Instructions

  • In your Dutch oven, melt butter over medium high heat. Add in peppers, onions, garlic and mushrooms. Sauté for 4 minutes. Add in frozen quick steaks + WOW seasoning packets. Continue cooking for another 4 minutes. Add in Stock, bouillon cubes and Bay leaves. Bring to boil, reduce heat to low and simmer for 20 minutes. Pepper to taste. Stir in corn starch and water mixture. Soup will begin to thicken. Stir in cheese, until incorporated. Add in cream.
  • Serve hot in bread bowls with additional cheese for topping. Or in a regular bowl with or without crusty bread for dipping.
