It’s a day for gathering with friends and family, sharing laughs, and, of course, feasting on an impressive spread of party favorites. The communal experience of game day is truly special, and the food plays a central role in making it memorable.

While “Football Food” is undeniably delicious, it isn’t always the most body-friendly choice, is it? Confronted with the prospect of grazing in front of a snack-laden table for three hours or more, I decided it was time for a mission: rethinking our Super Bowl snacks. My goal was to create something that would satisfy those intense cravings for classic game day fare without packing a bazillion calories. If my eldest son isn’t around, I’m lucky enough to claim all the fiery ones for myself, as the rest of the family leans towards the milder BBQ variety. But for me, it has to be hot, with plenty of Ranch for dipping and an abundance of crisp celery. My culinary gears began to spin, and I recalled a brilliant recipe I’d seen on a fellow blogger’s site: Buffalo Cauliflower Bites. At first glance, they look remarkably like hot wings, but they are, in fact, tender cauliflower florets drenched in spicy buffalo sauce and served with the same accompaniments. This sparked a thought: what if those incredible cauliflower bites could be transformed into a dip? This simple preparation enhances their natural flavors and ensures they roast beautifully. Pop them into the oven for a short while, allowing them to become tender and slightly caramelized. Be warned, though: the aroma is so enticing, it’s often a challenge not to snack on all the roasted cauliflower before it even makes it into the dip!

Cauliflower holds a special place as one of my absolute favorite vegetables, and for good reason. We frequently substitute it for potatoes in our meals, and if you haven’t experienced Cauliflower Mash yet, you are truly missing out – it’s incredibly delicious! Beyond its versatility, cauliflower is a true superfood, packed with an impressive array of nutritional benefits. In a separate bowl, use your mixer to cream together the Neufchâtel cheese until smooth, then incorporate the hot wing sauce, light sour cream, and Ranch seasoning until thoroughly combined. Next, fold in the minced cauliflower and onion mixture, along with about half of the mozzarella cheese. Spread this creamy concoction evenly into a small, shallow baking dish. For an extra kick of authentic buffalo flavor, generously top with blue cheese crumbles – a personal favorite of mine! Bake the dip for approximately 15 minutes, or until it’s bubbly and heated through. Finish by garnishing with sliced green onions, and serve warm with an assortment of fresh veggies and crispy tortilla chips for dipping. It’s an explosion of flavor that’s both satisfying and surprisingly light!

Buffalo Cauliflower Dip

Everyone loves that buffalo chicken dip at parties, but not everyone wants the calories, or sometimes even the meat. This Buffalo Cauliflower Dip will give you the satisfaction of that famous dip with less calories and all of the taste.

Ingredients

  • 1 medium sized head of cauliflower broken into florets
  • 1 small yellow onion cut in chunks
  • 1 Tablespoon Olive Oil
  • 1/4 teaspoon each Salt and Pepper
  • 1/3 cup Frank’s Hot Wing Sauce you can add more if you want it spicier
  • 5 ounces Neutchatel Cheese
  • 1 cup Light Sour Cream
  • 1 1/2 Tablespoons Ranch Seasoning
  • 1 cup Low fat Mozzarella cheese divided
  • Bleu Cheese crumbles if desired
  • Sliced green onion for garnish
  • For Serving: Celery sticks Carrot chips, bell pepper slices and tortilla chips

Instructions

  • Preheat oven to 425 degrees.
  • Line a cookie sheet with parchment paper. Toss cauliflower and onion in a gallon sized bag with olive oil and salt and pepper. Spread over parchment paper. Bake for about 20 minutes or until cauliflower is tender. Remove from oven, cool slightly.
  • Reduce oven temperature to 375 degrees.
  • Add cauliflower and onion to food processor and pulse until minced.
  • In a medium bowl with your mixer, cream Neutchatel cheese until smooth. Add in sour cream, hot wing sauce and Ranch seasoning and mix until combined. Add in cauliflower, onions and half of the mozzarella cheese. Mix until incorporated.
  • Spread into a small shallow baking dish. Top with remaining Mozzarella and Bleu cheese crumbles if desired.
  • Bake for about 20-25 minutes or until dip is heated through.
  • Garnish with sliced green onion. Serve warm with veggies and tortilla chips for dipping.
