Sunshine Orange Layer Cake

Zesty Fresh Orange Layer Cake: A Perfect Celebration Dessert with Vibrant Citrus Flavors

A luscious orange cake, perfect for any celebration.

The calendar had once again circled back to our beloved “Birthday with the Girls” tradition! This cherished gathering is a highlight for our quartet of friends, especially when two of us celebrate birthdays in the brisk month of January. My dear friend Rhonda, “Miss December,” and I, “Miss June,” enthusiastically took on the roles of host and chef, ready to prepare a delightful dinner for the January birthday ladies, Betsy and Lori. Our aim was simple: to create an unforgettable evening filled with laughter, good food, and exceptional company.

Rhonda’s home was impeccably decorated, radiating warmth and hospitality. Her family had graciously made themselves scarce for the evening, leaving us with a rare and treasured commodity: peace and quiet. Between the four of us, we collectively parent thirteen children, a beautiful chaos that fills our lives with joy and endless activity. While I adore my children beyond measure, there are moments when silence truly is golden, especially when it’s accompanied by the comforting presence of girlfriends, delicious food, a fine bottle of wine, and engaging conversation. This night promised to be one of those perfectly serene occasions.

As we planned the menu, a particular challenge arose: Betsy, one of our birthday girls, doesn’t like chocolate. Yes, you read that right – *no chocolate*! This culinary preference, while unusual, always inspires me to seek out truly special dessert recipes. I immediately began scouring my recipe collection and the internet for something that would dazzle her taste buds and ensure she felt celebrated.

It was during this quest that I stumbled upon a recipe for this truly magnificent orange cake. The recipe, discovered on Finecooking.com, was submitted by the talented Ris Lacoste. If I ever had the opportunity to meet her, I would express my sincerest gratitude. This cake isn’t just good; it’s extraordinary! Every single element — the vibrant orange filling, the creamy frosting, and the tender cake layers — is perfectly flavored. The secret, I quickly realized, lies in the generous use of fresh orange juice and zest, which infuses every bite with an unparalleled brightness and zestiness.

I must admit, this fresh orange layer cake is not a quick bake. It’s a project, demanding time and attention with its multiple distinct steps. However, please don’t let that deter you! To skip making this cake would be to miss out on a truly spectacular culinary experience. The effort poured into its creation is repaid tenfold with every delicious slice. It’s a labor of love that results in a dessert that tastes as though it came straight from a gourmet bakery, but with the added warmth of homemade charm.

Freshly squeezed oranges and fragrant orange zest are the heart of this perfect citrus cake, elevating its flavor profile.
Preparing the luscious orange filling first is key, allowing it ample time to chill and firm up for ideal texture.
Here the cake is, assembled with its delightful, thick layer of orange filling.

My youngest daughter, my trusty sous chef for many culinary adventures, watched me assemble the cake layers with the vibrant orange filling. Her innocent observation made us both chuckle: she declared it looked like a “giant hamburger!” A charming, unexpected compliment for a cake that would soon become a showstopper.

The original recipe suggested garnishing with fresh orange slices and mint leaves, which I agree would be absolutely gorgeous, especially for a spring or summer presentation. However, for a cozy winter birthday celebration, I envisioned something a bit more decadent: homemade chocolate curls. The pairing of chocolate and orange is a classic for a reason, creating a harmonious blend of rich sweetness and bright citrus. I also knew this would be an easy solution for Betsy – I could simply serve her slice without the chocolate curls, ensuring everyone enjoyed their dessert precisely to their liking. This simple adjustment allowed for both aesthetic appeal and catering to individual preferences, truly making it easy peasy!

Each little slice of this orange cake truly felt like a piece of heaven. The texture was light and airy, while the fresh orange filling provided a burst of tangy sweetness that was perfectly balanced by the rich, creamy buttercream frosting. It was a symphony of flavors and textures, a culinary triumph that delighted everyone, even our chocolate-averse friend. The compliments poured in, validating every minute spent in the kitchen. This cake isn’t just a dessert; it’s an experience, a joyous expression of flavor and care.

The irresistible orange filling, with its vibrant color and incredible flavor, truly sets this cake apart.

Once all the components of your magnificent orange cake — the layers, the filling, and the frosting — have thoroughly cooled, it’s time for the delightful assembly process. Carefully place one cake layer onto your chosen cake stand or serving plate. With an offset spatula, spread a generous and even layer of the chilled orange filling across the surface of the cake, aiming for about a 1/2-inch thickness. You might find you have a little extra filling, which is perfect for a chef’s treat! Gently place the second cake layer on top, creating a beautiful sandwich of citrusy goodness. To ensure the filling sets perfectly and the cake remains stable, refrigerate the assembled cake for at least an hour, or until the filling is firm.

Next, using a clean icing spatula, apply a very thin layer of frosting over the entire cake. This is known as a “crumb coat,” and it’s a vital step to trap any loose crumbs, ensuring your final layer of frosting is smooth and pristine. Return the cake to the refrigerator for another 10-15 minutes to allow the crumb coat to firm up. Finally, retrieve your cake and apply the remaining orange buttercream frosting, smoothing it evenly or adding decorative strokes as desired to complete your masterpiece.

For a beautiful presentation, you can adorn this citrusy delight with delicate chocolate curls, fresh orange slices, or vibrant mint leaves, depending on the season and your preference. The beauty of this cake is that it’s so incredibly delicious, you might even find yourself wanting to enjoy it plain, without any additional adornment! The rich, zesty flavors truly stand on their own. This exceptional fresh orange layer cake is not just for birthdays; its bright and cheerful character makes it an absolutely fantastic dessert for Easter, spring brunches, summer gatherings, or any occasion that calls for a truly memorable sweet treat. It’s a versatile and impressive dessert that is sure to become a beloved recipe in your collection.

This vibrant orange cake would undoubtedly make a spectacular Easter dessert, bringing a burst of sunshine to your holiday table!

Ingredients

For the Zesty Orange Filling:

  • 2/3 cup granulated sugar
  • 3 Tablespoons all-purpose flour
  • 1 cup fresh orange juice (from approximately 3 large oranges, with pulp removed)
  • 2 large egg yolks
  • 2 Tablespoons salted butter

For the Orange Cake:

  • 2 1/4 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/3 cup salted butter, softened
  • 1/3 cup vegetable shortening
  • 2 teaspoons grated orange zest (from about one large orange)
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 cup fresh orange juice (from about 3 large oranges, pulp removed)

For the Orange Buttercream Frosting:

  • 18 Tablespoons salted butter (room temperature)
  • 6 cups powdered sugar
  • dash of salt
  • 1 1/2 teaspoons grated lemon zest
  • 6 Tablespoons fresh orange juice

Instructions

Making the Zesty Orange Filling:

  • In a heavy-bottomed saucepan, combine the sugar and flour. Whisk them together thoroughly to ensure no lumps. Gradually add the fresh orange juice and egg yolks, whisking quickly and continuously until well combined. Place the saucepan over medium-high heat and cook, continuing to whisk constantly, until the mixture begins to boil, which usually takes about 3 minutes.
  • Once boiling, continue to cook and stir constantly for another minute. During this time, the mixture will visibly thicken and become less cloudy. It’s crucial to allow it to boil for the full minute to ensure the filling reaches the proper consistency and will be firm enough to support the top layer of your cake. Remove the saucepan from the heat and stir in the salted butter until it’s completely melted and incorporated. Transfer the filling to a heatproof bowl, then cover it with plastic wrap, pressing the plastic directly onto the surface of the filling to prevent a skin from forming.
  • Chill the orange filling thoroughly in the refrigerator until it is firm and completely cooled before using. This step is essential for proper cake assembly.

Making the Orange Cake Layers:

  • Preheat your oven to 350 degrees F (175 degrees C). In a medium bowl, sift together the flour, baking powder, and salt. Set this dry mixture aside. Generously grease and flour two 8-inch round cake pans. If you prefer thinner layers, 9-inch round pans can also be used.
  • In the bowl of your stand mixer (or using a hand mixer), cream together the softened butter, vegetable shortening, and grated orange zest until light and fluffy. Gradually beat in the granulated sugar, then add the eggs one at a time, creaming well after each addition. Remember to scrape down the sides of the bowl frequently to ensure everything is evenly combined.
  • With the mixer on low speed, add the sifted dry ingredients alternately with the fresh orange juice to the creamed mixture, beginning and ending with the dry ingredients. Beat just until combined after each addition, being careful not to overmix. Pour equal amounts of batter into your two prepared cake pans. Gently tap the pans on the counter a couple of times to release any air bubbles and help the batter settle evenly.
  • Bake for approximately 28 minutes, or until a wooden toothpick inserted into the center of the cakes comes out clean. Allow the cake layers to cool in their pans for about 10 minutes before carefully loosening them from the sides of the pans. Invert them onto a wire rack to cool completely before frosting.

To Make the Creamy Orange Buttercream Frosting:

  • In your stand mixer, cream the room temperature salted butter until smooth and fluffy. Gradually add the powdered sugar and a dash of salt, mixing on low speed until combined, then increase speed to medium and beat until light. Incorporate the grated lemon zest and fresh orange juice, then mix until the frosting is light, creamy, and spreadable. Make sure to scrape down the sides of the bowl to ensure all ingredients are fully incorporated.
  • If you’re not using the frosting immediately, refrigerate it. Be aware that refrigerated buttercream will firm up considerably. When you’re ready to use it, simply place it back in the mixer and beat it again on medium speed until it returns to a light, creamy, and easily spreadable consistency.
