Cream: Heavy cream is used to create the luxurious lemon glaze. It adds a delicate creaminess and helps thin the glaze to the perfect consistency for drizzling. If heavy cream isn’t available, milk or half-and-half can be successfully substituted, though the richness might vary slightly.

1. In a large mixing bowl, gently stir together the yeast and warm milk. Ensure your milk is between 105-115°F – a good trick is to microwave one cup of cold milk for about 1 minute, which usually brings it to around 107°F. Allow the yeast mixture to proof for five minutes. You’ll know it’s ready when it becomes foamy and bubbly, indicating the yeast is active.

2. Once the yeast has proofed, add the room temperature eggs, softened butter, granulated sugar, salt, lemon zest (for the dough), and all-purpose flour to the bowl. Stir these ingredients together until they are just combined and a shaggy dough forms. If you’re using a stand mixer, now is the time to bring it out.

3. Attach the dough hook to your stand mixer and begin mixing the dough on medium-low speed. Continue mixing until the dough starts to pull away cleanly from the sides of the mixing bowl. Once it begins to pull away, set a timer for five minutes and continue to mix with the dough hook attachment until the dough forms a smooth, elastic ball.

4. Carefully remove the dough from the mixing bowl. Lightly spray the same bowl with non-stick cooking spray or grease it with a little oil. Place the formed dough ball back into the greased bowl, then cover it with a lightweight, dry kitchen towel. Allow the dough to rise in a warm, draft-free place for 45-60 minutes, or until it has visibly doubled in size.

5. Next, lightly flour your countertop or a clean work surface. Turn the risen dough out onto the floured surface and use a rolling pin to roll it into a large rectangle, approximately 1/4 inch thick. Aim for an even thickness across the entire rectangle for uniformly sized rolls.

Take the melted butter and brush it evenly over the entire surface of the rolled-out dough. Then, generously sprinkle the lemon-sugar mixture over the buttered dough, ensuring it covers almost to the edges.

7. Starting from one of the long sides, carefully and tightly roll the dough to form one large, long log. Once rolled, use a sharp knife or unflavored dental floss to cut the log into individual slices, about 1 1/2 inches thick. This method helps maintain the round shape of the rolls.

8. Lightly grease the bottom of a 9×13-inch baking pan. Arrange the cut lemon rolls into the prepared pan, leaving a little space between each one to allow for their final rise. Cover the pan again with the same lightweight towel and let the lemon rolls rise for another 30 minutes. Meanwhile, preheat your oven to 400° Fahrenheit.

9. Place the risen rolls into the preheated oven and bake for 25-30 minutes. Keep a close eye on them to prevent overcooking; they should turn a beautiful golden brown on top. Once baked to perfection, gently remove the pan from the oven and allow the rolls to cool slightly in the pan while you prepare the glaze.

10. To make the glaze, whisk together the powdered sugar, lemon zest (for the glaze), heavy cream, fresh lemon juice, and vanilla extract in a medium bowl until the mixture is smooth and free of lumps. Adjust consistency by adding a tiny bit more powdered sugar if too thin, or a few drops of lemon juice/cream if too thick. Generously apply this luscious glaze over the tops of the still-warm (but not piping hot) rolls. The warmth will help the glaze melt slightly and seep into all the nooks and crannies.

Expert Tips for Perfect Lemon Sweet Rolls Every Time

Achieving bakery-quality homemade lemon sweet rolls is easier than you think with these helpful tips:

  • Measure Your Flour Accurately: This is perhaps the most critical tip for baking. Too much flour will result in super dense, dry, and tough rolls, which is definitely not what we’re aiming for! Use a kitchen scale for precision, or if measuring by volume, use the “spoon and level” method: spoon flour into your measuring cup and then level it off with a straight edge, rather than scooping directly from the bag.
  • Don’t Kill Your Yeast: Yeast is a living organism, and its activity depends heavily on temperature. Ensure your milk is between 105°F and 115°F (40°C to 46°C). Temperatures exceeding 110°F can kill the yeast, preventing your dough from rising, while temperatures below 105°F may not activate it sufficiently. Always check with a thermometer for best results.
  • Mix Just Enough, Not Too Much: Overmixing dough can develop too much gluten, leading to tough rolls. Mix the dough until it’s cohesive and smooth, but still slightly tacky to the touch. It shouldn’t be overly sticky, clinging to your hands. If using gluten-free flours, a bit more stickiness is expected; simply add a generous dusting of extra flour to your countertop and hands when rolling out the dough to prevent sticking.
  • Ensure a Warm Rising Environment: Yeast loves warmth! Find a cozy, draft-free spot for your dough to rise. This could be a slightly warm oven (turned off, perhaps warmed briefly and then off), near a sunny window, or on top of a warm appliance. A consistent warm environment helps the dough rise evenly and quickly.
  • Storage and Reheating: Leftover lemon sweet rolls can be stored in an airtight container at room temperature for up to 2-3 days, or in the refrigerator for up to a week. To enjoy them warm again, microwave individual rolls for 15-30 seconds, or heat them in a preheated oven at 300°F (150°C) for about 10 minutes, covered with foil to prevent drying out.
  • Freezing for Later: These rolls freeze wonderfully! You can freeze unbaked rolls after the second rise (place them in the pan, cover tightly, and freeze), or freeze baked and glazed rolls individually. Ingredients

For the Dough

  • 1 cup of warm milk 105 – 115 degrees F
  • 2 1/2 teaspoons yeast
  • 2 eggs room temperature
  • 1/3 cup sugar
  • 1 stick 1/2 cup butter, softened
  • 1 teaspoon salt
  • 1 teaspoon lemon zest
  • 4 cups all purpose flour

For the Lemon Filing

  • 3 teaspoons lemon zest
  • 2/3 cup sugar
  • 1/4 cup butter melted

For the Lemon Glaze

  • 2 cups powdered sugar
  • 3 teaspoons lemon zest
  • 1 Tablespoons cream
  • 2 1/2 Tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  • In a large mixing bowl stir together yeast and warm milk. (One cup of cold milk in the microwave for 1 minute = 107 degrees F.) Allow yeast to proof for 5 minutes.
  • Add in eggs, butter, sugar, salt zest and flour. Stir until combined.
  • Using your dough hook attachment, mix dough, when it begins to pull away from the sides of the mixing bowl, set a timer for 5 minutes, continuing to mix with the dough hook attachment.
  • Remove dough from mixing bowl, spray the bowl with non-stick cooking spray, and place dough back in the bowl, and cover with a lightweight, dry towel. Allow dough to rise for 45-60 minutes, or until it’s doubled in size.
  • Lightly flour the countertop and roll the dough into a large rectangle approximately 1/4″ thick.
  • Combine lemon zest and sugar. Brush the top of the dough with melted butter and then sprinkle lemon sugar over the dough.
  • Roll the dough, from the long side, to form one long large roll. Cut into 1 1/2″ slices.
  • Grease the bottom of a 9×13″ baking pan, and place the rolls into the pan. Cover again with the towel and let them raise for another 30 minutes.
  • Preheat oven to 400 degrees F.
  • Bake rolls for 25-30 minutes. Watch them. When they are golden brown pull them from the oven and let them cool while you prepare the glaze.
  • Whisk glaze ingredients together and apply generously to the top of the warm rolls.

Notes

You will need about 4-5 good sized lemons for this recipe.
