- 1¼ cups Vanilla Wafer Cookies finely ground
- 2 heaping teaspoons finely ground chocolate covered espresso beans
- 2 Tablespoons good quality cocoa powder
- ½ cup powdered sugar
- 2 Tablespoons Raw honey
- ¼ cup spiced rum
- For coating: crushed Vanilla wafers (as used here), cocoa powder, powdered sugar, or melted chocolate.
Instructions

Begin by preparing your dry ingredients. Using your food processor, finely grind the toasted coconut almonds (or regular toasted almonds) until they achieve a texture similar to fine sand. Transfer them to a large mixing bowl. Next, process the Vanilla Wafer Cookies until they are also finely ground into crumbs, and add them to the bowl with the almonds. Finally, finely grind the chocolate-covered espresso beans and incorporate them into the mixture. Add the good quality cocoa powder and powdered sugar to the bowl. Mix these dry ingredients thoroughly until well combined.
