  • 1 Tablespoon Butter
  • 2 Tablespoons flour
  • 3/4 cup milk
  • 1/2 cup sharp white cheddar Or substitute Gruyere cheese, shredded
  • 1/8 cup bread crumbs

  • Preheat oven to 400 degrees F (200 degrees C) and spray a small baking dish with non-stick olive oil cooking spray.
  • Place quartered Brussels sprouts evenly in the prepared dish.
  • In a small saucepan over medium heat, melt butter. Whisk in flour for 1 minute until a light roux forms. Slowly whisk in milk until there are no lumps and the sauce begins to thicken. Stir in the shredded cheese until completely melted and smooth.
  • Pour the creamy cheese sauce over the Brussels sprouts, spreading it evenly across the top.
  • Sprinkle generously with bread crumbs. Lightly dust the top with paprika for color and flavor.
  • Give a light spray of olive oil to the bread crumbs to help them crisp up beautifully.
