Conquering My Fear (for Fun): The Creation of Our Spider Web Ice Cream Pie

You might be surprised to learn that despite the prominent arachnids adorning this Halloween delight, I am absolutely terrified of spiders. Seriously, I’d rather share a bench with a snake than have a spider anywhere near me! Yet, when October rolls around, those creepy little eight-legged creatures suddenly become the stars of the show, perfectly fitting into the festive and spooky atmosphere of Halloween, don’t they?

This Spider Web Ice Cream Pie was my third recipe contribution for #HalloweenTreatsWeek, and what a fantastically fun and delicious week it was! I wanted to cap off the event with something simple, impressive, and utterly delicious. This ice cream pie ticks all those boxes. It’s so straightforward to make that you don’t even need to wait for Halloween itself; it makes a fantastic weekend project anytime you’re craving a festive and cool dessert. Imagine whipping this up for a party, and watching everyone’s faces light up – or perhaps get a little shiver – at the sight of the spooky web design!

A Sweet Tradition: My Journey with Ice Cream Cakes & Pies

My passion for creating unique ice cream desserts stems from a long-standing family tradition. My oldest son, bless his heart, has never been a huge fan of traditional desserts. Put a bowl of vibrant, fresh vegetables in front of him, and they disappear in a flash. But when it comes to sweet treats, he’s always been quite particular. So, from a very young age, his birthday request was consistently for ice cream cakes or pies instead of a conventional cake. This tradition sparked a creative journey for me, as I learned to craft these frozen masterpieces.

His birthday falls on the second of November, right after Halloween, which always inspired us to throw fantastic Halloween-themed parties when he was little. All his friends would arrive in their costumes, giving them a brilliant opportunity to wear their outfits one more time after trick-or-treating! It was such a smart mom move, if I do say so myself – getting double the fun out of those costumes!

Back then, our go-to was typically a 9×13-inch “cake” featuring a rich brownie base and cool, refreshing mint chocolate chip ice cream. I would always decorate the top to resemble a spooky graveyard, complete with crushed Oreo “dirt,” candy tombstones, and gummy worms, perfectly matching the Halloween party theme. It was a huge hit, and he requested it every single year without fail. Looking back, this incredible Chocolate Marshmallow Pie Crust with its delightful crunch and chocolatey flavor would have been an absolutely amazing and fun option for those early birthday pies! It adds a unique texture and flavor dimension that takes any ice cream pie to the next level.

You’ll be amazed at how incredibly easy it is to assemble this festive Spider Web Ice Cream Pie. The process is broken down into a few simple steps, making it perfect for even novice bakers or those short on time. Here’s a detailed look at how to bring this spooky dessert to life:

1. Prepare Your Signature Chocolate Marshmallow Pie Crust

The magic truly begins with the unique Chocolate Marshmallow Pie Crust. This isn’t your average pie crust; it’s a delightful, no-bake creation that adds an incredible chewiness and a rich chocolatey flavor that perfectly complements the ice cream. You’ll only need four simple ingredients: butter, miniature marshmallows, Rice Krispies cereal, and Hershey’s chocolate syrup. Repeat this motion around the entire pie, creating radial lines that mimic the spokes of a spider’s web. It’s a surprisingly simple technique that yields a dramatically spooky and impressive effect. The key is to work relatively quickly before the ice cream gets too soft.

4. Garnish and Serve

To complete the Halloween theme, garnish your pie with a few creepy plastic spiders. I love using the ones attached to rings; they’re easy to place and remove before serving. I often find these types of fun, inexpensive decorations in the dollar section of stores like Target, but any party supply store or online retailer will have a variety of options. Other fun garnishes could include gummy worms, candy corn, or even crushed Oreos around the edge for extra “dirt.”

Once decorated, store the pie in the freezer until you’re ready to serve it. This ensures it’s perfectly firm and holds its shape. When it’s time to enjoy, let the pie sit on the counter for about 5-10 minutes. This brief resting period allows the ice cream to soften just enough, making it much easier to slice into clean, beautiful portions without breaking the crust or struggling with a rock-hard filling. Each slice will reveal the creamy vanilla, crunchy chocolate marshmallow crust, and of course, a slice of the eerie spider web design.

Spider Web Ice Cream Pie

Equipment

  • Ceramic Pie Dish, 10-Inch
Prevent your screen from going dark

Ingredients

  • 1 cup miniature marshmallows
  • 1/2 cup Hershey’s Chocolate Syrup + additional for swirling
  • 1 Tablespoon butter
  • 3 cups Rice Krispies Cereal
  • 1.5 quart vanilla bean ice cream

Instructions

  • Butter one 9″ deep dish pie plate.
  • In a medium-sized saucepan over low heat, stir marshmallows, chocolate syrup and butter until marshmallows and butter are melted and can be stirred smooth.
  • Remove from the heat and stir in cereal until it’s completely coated.
  • Transfer to pie plate. Press into the bottom and up the sides of the pie plate.
  • Place in the freezer for about 30 minutes.
  • Fill with about 1 – 1.5 quarts of vanilla bean ice cream and return to the freezer for about 1 hour.
  • Remove from the freezer and swirl on chocolate syrup and make your web, decorate with plastic spiders. Place back in the freezer until ready to serve.
  • Let rest on the counter for about 10 minutes to make slicing easier.
