Ingredients

  • 10 egg roll wrappers
  • 3 large tart apples such as Granny Smith or Honeycrisp or a combination of both, about 4 cups, diced
  • 1 Tablespoon lemon juice
  • cup granulated sugar
  • ¼ teaspoon salt
  • 1 Tablespoon all purpose flour
  • 1 ½ teaspoons apple pie spice
  • Water
  • Non-stick cooking spray
  • Optional: powdered sugar or cinnamon sugar for dusting and caramel sauce for dipping

Instructions

  • Preheat air fryer to 400°. 
  • In a medium-sized bowl, toss the apples with the lemon juice. Add in flour, apple pie spice, sugar and salt, and toss once again to coat the apples. Set aside. 
  • With an eggroll wrapper, corner facing you place 1/10th of the apple mixture in the middle, just below the center of the egg roll wrapper. Fold the bottom up and over the mixture. Moisten the other 3 edges with water. Fold in one side and then the other, then roll upward to seal the egg roll. Repeat for each one. 
  • Cook them in batches. Spray the inside of the air fryer basket with non-stick cooking spray, and arrange egg rolls in a single layer. Spray the top of them with non-stick cooking spray. 
  • Cook for 5 minutes, or until golden brown. Flip them over, and spray with cooking spray once more. Cook for another 5 minutes, or until golden brown.
  • Dust with a cinnamon sugar mixture or powdered sugar and serve with caramel sauce. Enjoy!
