Rhonda, one of eleven children, experienced profound loss a year ago with the passing of her mother, Alice, followed shortly by her father. As you can well imagine, this was an incredibly emotional and challenging period for their large family. In a beautiful and touching tribute at their memorial service, the family shared not only this cherished cookie recipe but also a fun, mathematical “trick” that her dad always kept on his business card, a trick through which he could always correctly guess your age. This gesture ensured that a piece of both their parents’ warmth, generosity, and unique spirit would live on and be shared with everyone who loved them. Ingredients

  • 1 cup oleo or butter (softened)
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup cooking oil (I used vegetable)
  • 1 teaspoon vanilla
  • 1 egg
  • 3 ½ cups flour

Instructions

  1. Preheat oven to 350 degrees F.
  2. In your mixer bowl cream together butter and sugars. Add in oil, vanilla and egg and mix well.
  3. Sift together flour, baking soda, cream of tartar and salt and gradually mix the flour mixture into the butter mixture until incorporated.
  4. Fold in the Rice Krispies, coconut, oatmeal, and chocolate chips by hand.
  5. Drop by rounded teaspoonful onto the baking sheet.
  6. Bake for 12 minutes at 350 degrees.
  7. Transfer to a cooling rack to cool completely. Store in an airtight container.
