This post is proudly sponsored by Frank’s Kraut. My unwavering love and honest opinions about their sauerkraut, however, are entirely my own!

I’m absolutely thrilled to share this recipe for Everything Sauerkraut Bread with you all, especially as we embrace the cooler months. While summer has its undeniable charms, there’s something truly special about the crisp air of autumn that makes us yearn for comforting, homemade meals. This seasonal shift not only changes the weather but also inspires exciting new additions to our culinary repertoire. This particular recipe brings together the best of both worlds: a beloved classic with an irresistible modern twist.

A significant part of my excitement stems from using Frank’s Bavarian Style Kraut in this creation. For years, I’ve cherished a simple Amish sauerkraut bread recipe, and the slightly sweet profile and aromatic caraway seeds of Frank’s Bavarian Kraut proved to be an absolutely perfect enhancement. This ingredient choice elevates the bread, imparting a subtle depth of flavor that complements the traditional recipe beautifully, making it even more delectable and unique.

Frank’s Sweet Bavarian Kraut: A Game Changer for This Recipe

If you’ve been following my culinary adventures for any length of time, you’ll know my family and I have a profound affection for Frank’s Kraut. It’s the brand I grew up with, and frankly, it’s the only sauerkraut I ever truly consider buying. Typically, I stick to their classic varieties, mostly out of habit. However, when Frank’s Kraut approached me with the opportunity to develop a recipe featuring their Sweet Bavarian Kraut, an exciting idea immediately sparked! I knew exactly how I wanted to showcase its unique qualities.

The subtle sweetness and the distinctive caraway seeds inherent in the Bavarian Kraut were precisely what was needed to add an inventive twist to my tried-and-true basic sauerkraut quick bread. My original recipe already featured a hint of brown sugar and some caraway seeds, so the Bavarian Kraut seamlessly integrated, amplifying those cherished flavors while introducing a delightful new dimension. This thoughtful ingredient swap truly elevates the bread, moving it beyond a simple staple to a memorable culinary experience.

The Magic of Everything Bagel Seasoning

Incorporating Everything Bagel Seasoning into this bread was a stroke of genius, if I do say so myself. It’s not just an addition; it’s a true enhancement. This seasoning doesn’t merely echo the caraway flavor already present in the Bavarian sauerkraut and the bread itself; it catapults the overall taste profile into a whole new dimension. With its harmonious blend of toasted sesame seeds, poppy seeds, dried garlic, dried onion, and a touch of salt, it brings a complexity and textural intrigue that is simply irresistible.

As a devoted fan of everything bagels – truly, they are my favorite of all bagels – I had a strong intuition that this seasoning would be the perfect complement to the rich, savory notes of the kraut bread. The combination is exceptional, offering a bold, satisfying flavor with every bite. The addition of the garlic, onion, and both toasted sesame and poppy seeds provides a fantastic depth of flavor, alongside a delightful, textural crunch on the crust of the bread. This finishing touch transforms a delicious loaf into an extraordinary one.

For those who love to DIY, I have a super easy recipe to make your own Everything Bagel Spice right at home. It’s incredibly simple and allows you to customize the ratios to your liking. However, if convenience is key, you can always purchase a pre-made blend, which is readily available at most grocery stores or online. Either way, don’t skip this crucial topping!

Essential Ingredients for Your Everything Sauerkraut Bread

Crafting this unique bread requires a straightforward list of ingredients, most of which you likely have on hand or can easily find. Here’s what you’ll need to create this savory masterpiece:

  • **Dry Active Yeast:** Just one standard 1/4-ounce package is all it takes to give our bread its perfect rise. Always double-check the expiration date to ensure your yeast is active and potent for the best results.
  • **Warm Water:** The ideal temperature is crucial for activating the yeast; aim for water between 110-115 degrees F (43-46 degrees C). Too hot, and you’ll kill the yeast; too cool, and it won’t activate properly.
  • **Mashed Potato Flakes:** These might seem like an unusual addition, but they are key to the bread’s incredibly moist and tender crumb, preventing it from drying out and adding a subtle richness.
  • **Brown Sugar:** Provides a delicate sweetness that balances the tang of the sauerkraut and enhances the overall flavor profile. It also contributes to the beautiful golden-brown crust.
  • **Salt:** Essential for enhancing all the flavors in the bread and regulating yeast activity.
  • **Caraway Seeds:** A traditional companion to sauerkraut, these seeds add an aromatic, slightly peppery, and anise-like flavor that pairs beautifully with the kraut.
  • **Vegetable Oil:** Used in the dough for moisture and tenderness, and a small amount brushed on top helps achieve that perfect crispy crust.
  • **Frank’s Sweet Bavarian Style Sauerkraut:** This is our star ingredient, providing moisture, flavor, and a delightful tang. While regular sauerkraut can be substituted, the sweet Bavarian variety with its caraway notes truly shines in this recipe. Remember to drain and chop it before adding.
  • **Bread Flour:** High in protein, bread flour gives this loaf its structure and chewy texture. All-purpose flour can be used as a substitute if bread flour isn’t available, though the texture may be slightly less chewy.
  • **Everything Bagel Seasoning:** This generous topping is non-negotiable! It adds a fantastic burst of garlic, onion, sesame, and poppy seed flavors, along with a satisfying crunch. You can easily make your own blend or purchase it ready-made from the store.

Mastering Your Everything Sauerkraut Bread: Step-by-Step

Below, you’ll find detailed, easy-to-follow instructions to create this incredible loaf. For the full recipe card with precise measurements and nutritional information, please refer to the bottom of this post.

First step of bread making: mixing warm water and yeast in a bowl.

Step One: Activate the Yeast & Combine Wet Ingredients. Begin by pouring the warm water (110-115 degrees F) into a large mixing bowl. Sprinkle the dry active yeast over the water and let it sit for about 5-10 minutes until it dissolves and becomes foamy, indicating it’s active. Once activated, stir in the mashed potato flakes, salt, brown sugar, 2 tablespoons of vegetable oil, and the drained, chopped Frank’s Kraut. Mix well until all ingredients are thoroughly combined, creating a unique base for your dough.

Second step of bread making: kneading the dough with a stand mixer.Step Two: Form and Knead the Dough, First Rise. Gradually add the bread flour (or all-purpose flour) to the wet mixture, stirring continuously until a stiff, shaggy dough begins to form. Once the dough is cohesive enough, attach the dough hook to your stand mixer and knead the dough on medium-low speed for precisely 4 minutes. This develops the gluten, resulting in a perfectly textured bread. After kneading, remove the dough from the mixer, lightly oil the mixing bowl, return the dough, and cover it loosely with plastic wrap or a clean kitchen towel. Allow it to rise in a warm, draft-free place for approximately one hour, or until it has visibly doubled in size. This first rise is crucial for flavor development and texture.

Third step of bread making: dough rising in a loaf pan, covered.

Step Three: Shape the Loaf, Second Rise, and Prepare for Baking. Generously grease a 9×5-inch loaf pan with Crisco or your preferred baking spray/oil. Gently punch the risen dough down to release the air, then transfer it to a lightly floured surface. Shape the dough into a neat loaf that fits snugly into your prepared loaf pan. Place the shaped dough into the pan, cover it again, and let it undergo a second rise for another hour, or until it has doubled in size once more. Meanwhile, preheat your oven to 350 degrees F (175 degrees C). Just before baking, lightly brush the top of the risen loaf with about 1 teaspoon of vegetable oil, then generously sprinkle it with the Everything Bagel Seasoning, ensuring an even coating for that irresistible crust.

Step Four: Bake to Golden Perfection & Cool. Carefully transfer the loaf pan to your preheated oven. Bake for approximately 50 minutes. The bread is done when it achieves a beautiful golden-brown color on top and sounds hollow when tapped on the bottom. An internal temperature of 190-200 degrees F (88-93 degrees C) confirms it’s fully baked. Once baked, remove the pan from the oven and let the bread rest in the pan for a few minutes. This allows the internal structure to set. Then, carefully transfer the loaf to a wire rack to cool completely before slicing. Slicing too early can result in a gummy texture. Patience will be rewarded with perfectly moist and flavorful slices!

To maintain its freshness and delightful texture, store your Everything Sauerkraut Bread in an airtight container at room temperature. It will remain delicious for up to 4 days. For longer storage, this bread freezes exceptionally well. Simply wrap it tightly in plastic wrap and then in foil, and it can be frozen for up to 3 months. Thaw at room temperature or warm gently in the oven for a freshly baked taste.

The Unexpected Health Benefits of Sauerkraut

Beyond its delightful flavor and versatility in cooking, sauerkraut is a nutritional powerhouse, brimming with health benefits that have made it a revered folk remedy for centuries. This fermented cabbage is packed with essential vitamins, notably high levels of Vitamin C and Vitamin K, which are crucial for immune function and bone health, respectively. Furthermore, sauerkraut is an excellent source of dietary fiber, supporting digestive health and contributing to a feeling of fullness. As a fermented food, it also contains beneficial probiotics, live bacteria that can help balance gut flora, improve digestion, and potentially boost overall well-being. Incorporating sauerkraut into your diet, even in a delicious bread like this, is a fantastic way to enjoy these healthful advantages.

Sauerkraut truly shines in baking, bringing a unique character that you might not expect. Its inherent moisture content makes it an exceptional addition to bread, ensuring a tender, never-dry crumb. The subtle tanginess of kraut, which can be mellowed or enhanced depending on the recipe, works wonders in savory breads like this Everything Sauerkraut Bread. But don’t limit its potential to savory dishes! That distinct tartness is also surprisingly perfect when paired with sweet elements, especially chocolate. Equipment

  • Franks Kraut, Shredded, Canned, 14-Ounce (Pack of 24)
  • Loaf Pans
  • Kitchenaid Stand Mixer
Prevent your screen from going dark

Ingredients

  • 1 package (1/4 ounce size) dry active yeast
  • ¾ cup warm water (110-115 degrees F)
  • ½ cup mashed potato flakes
  • 3 Tablespoons brown sugar
  • 1 teaspoon salt
  • ½ teaspoon caraway seeds
  • 2 Tablespoons + 1 teaspoon vegetable oil (divided for dough and brushing)
  • 1 14 ounce can Frank’s Sweet Bavarian Style Sauerkraut, drained and chopped
  • 3 ½ cups bread flour (or all-purpose flour)
  • ¼ cup Everything Bagel Seasoning

Instructions

  • In a large mixing bowl, pour in the warm water. Sprinkle the package of dry active yeast over the water, stirring gently until it is fully dissolved. Allow it to sit for a few minutes until slightly foamy, ensuring the yeast is active.
  • To the yeast mixture, add the mashed potato flakes, salt, caraway seeds, brown sugar, 2 tablespoons of vegetable oil, and the well-drained and chopped Frank’s Sweet Bavarian Style Sauerkraut. Mix these ingredients thoroughly to combine. Gradually add in the bread flour (or all-purpose flour) to the bowl, stirring until a stiff, shaggy dough forms and most of the flour is incorporated.
  • If using a stand mixer, attach the dough hook and knead the dough on medium-low speed for 4 minutes until it becomes smooth and elastic. If kneading by hand, transfer the dough to a lightly floured surface and knead for about 8-10 minutes. Once kneaded, transfer the dough to a lightly oiled bowl, cover it with plastic wrap or a clean kitchen towel, and let it rise in a warm place for approximately one hour, or until it has doubled significantly in size.
  • Grease a standard 9×5-inch loaf pan with Crisco or another shortening. Gently punch the risen dough down to release the air. Shape the dough into a cohesive loaf and carefully place it into the prepared loaf pan. Cover the pan again with plastic wrap or a towel and allow the dough to undergo a second rise for another hour, or until it has once more doubled in size and looks puffy.
  • While the dough is on its second rise, preheat your oven to 350 degrees F (175 degrees C). Once the loaf has completed its second rise, gently brush the top surface with the remaining 1 teaspoon of vegetable oil. Then, generously sprinkle the entire top of the loaf with the Everything Bagel Seasoning, ensuring it adheres well to the oiled surface for a flavorful, crunchy crust.
  • Bake the loaf in the preheated oven for 50 minutes, or until the bread is beautifully golden brown on top and sounds hollow when tapped on the bottom. A thermometer inserted into the center should read 190-200 degrees F. Once baked, remove the pan from the oven and let the bread cool in the pan for about 5-10 minutes before carefully transferring it to a wire rack. Allow it to cool completely on the rack before slicing and serving. This cooling time is important for the bread’s structure and flavor.

Notes

For optimal freshness, store your baked Everything Sauerkraut Bread in an airtight container at room temperature and consume it within 4 days. If you wish to keep it longer, the bread freezes beautifully for up to 3 months. Wrap it tightly in plastic wrap, then in aluminum foil, and store in the freezer. Thaw at room temperature before enjoying.

If you don’t have a stand mixer with a dough hook, you can knead the dough by hand on a lightly floured surface. The kneading time will be slightly longer, around 8-10 minutes, until the dough is smooth and elastic.

While Frank’s Sweet Bavarian Style Sauerkraut is highly recommended for its unique sweet and caraway notes, you can certainly substitute it with regular sauerkraut. Just be aware that the overall flavor profile will be a bit more tart, but still delicious!

Bread flour provides a chewier texture, but if you only have all-purpose flour on hand, feel free to use it. The bread will still be wonderfully moist and flavorful, perhaps with a slightly softer crumb.
