Key Ingredients for Your Sausage and Crescent Breakfast Bake
To ensure you have everything you need for this delicious and easy breakfast casserole, here’s a detailed look at the essential ingredients. For the complete list with specific measurements and detailed instructions, simply scroll to the bottom of this post where you’ll find the full printable recipe card.
-
Pillsbury Crescent Rolls – These iconic rolls are the star of our crust! You’ll typically find them in the refrigerated dairy aisle of your local grocery store. For an even easier base that requires less pinching, look for the crescent roll dough sheet if it’s available. It creates a seamless bottom layer perfect for holding all the delicious fillings.
-
Breakfast Sausage – For this recipe, I primarily use ground pork breakfast sausage, which provides a classic, savory flavor that pairs wonderfully with the other ingredients. My usual go-to brands are Bob Evans or Jimmy Dean, known for their consistent quality. However, feel free to experiment! Ground turkey sausage offers a leaner option, while other varieties of pork sausage or even a mild Italian sausage would also lend fantastic flavor to your casserole.
-
Your Favorite Veggies – This is where you can truly personalize your casserole! I opted for a colorful and flavorful mix of yellow onions, earthy mushrooms, and both red and green bell peppers for a touch of sweetness and crunch. Other excellent choices include spinach, zucchini, diced potatoes, or even finely chopped broccoli. The key is to dice them small enough so they cook evenly and blend well with the other ingredients.
-
Eggs – The binding agent and heart of any great breakfast casserole! Any large eggs will work perfectly here. Whisking them well with a fork or whisk ensures a light and fluffy texture throughout the bake.
-
Salt and Pepper – Simple yet essential seasonings. Add these to taste, adjusting the quantities based on your preference and the seasoning in your sausage.
-
Shredded Cheese – The gooey, cheesy topping that ties everything together! I typically use Three Cheese Cheddar blend for a rich, complex flavor, but virtually any kind of shredded cheese will work beautifully. Plain sharp or mild cheddar cheese, creamy mozzarella cheese, or even a flavorful Monterey Jack or Swiss cheese would be excellent alternatives. Don’t be afraid to mix and match for a custom cheesy experience.
-
Scallions – Also known as green onions, these are entirely optional but highly recommended for a fresh, vibrant garnish. They add a mild oniony bite and a pop of color that makes the finished casserole even more appealing.

How to Make This Delicious Sausage and Crescent Roll Breakfast Bake Casserole Recipe
Creating this incredibly delicious and satisfying breakfast casserole is simpler than you might think. Just follow these straightforward steps for a morning meal that’s sure to impress everyone at your table. Remember to preheat your oven to 350°F (175°C) before you begin!

First Step: Begin by browning your ground breakfast sausage in a large skillet over medium-high heat. As the sausage cooks, break it apart with a spoon or a meat chopper. Once it starts to brown, add the diced yellow onions to the skillet. Cook the sausage and onions together, stirring occasionally, until the sausage is about halfway done and the onions have softened and become translucent. This initial browning builds a rich flavor foundation for the entire casserole.

Second Step: When the sausage is approximately half cooked, incorporate the mushrooms and bell peppers into the skillet with the sausage and onions. Continue to cook the mixture, stirring frequently, until the sausage is fully cooked through and golden brown. The vegetables should be tender-crisp, not mushy. Once cooked, make sure to drain any excess grease from the skillet to prevent your casserole from becoming soggy.

Third Step: Ensure your sausage and vegetable mixture is thoroughly cooked until the sausage achieves a beautiful golden brown color and the vegetables are tender. This step is crucial for developing deep, savory flavors. Once done, set the mixture aside while you prepare the casserole base.

Fourth Step: Prepare a 9×13 inch baking dish by lightly spraying it with a non-stick cooking spray. Carefully unroll the crescent roll dough and spread it evenly across the bottom of the pan. Gently press and seal any seams or edges together to form one continuous, large sheet of dough. This will create a delicious, flaky crust for your casserole.

Fifth Step: Evenly spread the cooked sausage and vegetable mixture over the crescent roll dough in the baking dish. Make sure to distribute it well across the entire surface so every slice of casserole gets a good portion of the savory filling.

Sixth Step: In a separate bowl, whisk together your eggs with the specified amounts of salt and pepper. Beat them until they are light and fluffy. Then, carefully pour this egg mixture evenly over the top of the sausage and vegetable layer in the baking dish, ensuring it seeps down into all the crevices. This will create the fluffy, eggy component of your casserole.

Seventh Step: Generously sprinkle your choice of shredded cheese evenly over the entire top of the casserole. This layer will melt into a golden, bubbly crust, adding richness and flavor. Place the dish into your preheated oven and bake the sausage breakfast casserole at 350°F (175°C) for approximately 30 minutes, or until the eggs are set, the crust is golden, and the cheese is beautifully melted and bubbly. To check for doneness, a knife inserted into the center should come out clean.

Eighth Step: Once baked to perfection, remove the casserole from the oven. Allow it to rest for about 10 minutes before slicing. This resting period is crucial as it allows the eggs to fully set and the flavors to meld, making it easier to cut into neat, beautiful squares.

Ninth Step: For a fresh touch and added visual appeal, sprinkle chopped scallions (green onions) over the top of the sliced casserole, if desired. Serve warm and enjoy!
To store leftovers, allow the casserole to cool completely to room temperature. Then, transfer it to an airtight container and refrigerate for up to 3 days. For longer storage, you can freeze individual portions for up to 3 months. Simply reheat in the microwave or oven until warmed through.

Frequently Asked Questions (FAQs) About Breakfast Casseroles
Here are some common questions and helpful answers regarding breakfast casseroles, specifically addressing concerns you might have about this sausage and crescent roll bake.
-
Why is my breakfast casserole soggy? If you find your casserole is soggy, it could be due to a few reasons. One common culprit is not baking it long enough, preventing the eggs from fully setting and moisture from evaporating. Another cause can be too much moisture from ingredients like undrained sausage grease, watery vegetables (like mushrooms or spinach), or excess liquid in the egg mixture. Ensure you properly drain cooked meats and sauté high-moisture vegetables beforehand to reduce water content. Also, make sure your oven temperature is accurate.
-
Do you have to refrigerate breakfast casserole before cooking? Many breakfast casserole recipes do require you to assemble them ahead of time and refrigerate them overnight before baking. This resting period allows the flavors to meld and the bread (if used) to soak up the egg mixture, often resulting in a richer, more cohesive dish. However, this particular Sausage and Crescent Breakfast Casserole Bake is one of the convenient exceptions – it does NOT require overnight refrigeration! You can prepare and bake it immediately, making it perfect for spontaneous breakfasts or when you’re short on time. While not required, you *can* prep ingredients ahead of time for easier assembly the next day.
-
How do you fix a dry breakfast casserole? If you find your casserole has turned out a bit dry, don’t despair! There are a few easy fixes. You can add a little milk, cream, or even a flavorful sauce (like a light gravy, hollandaise, or cheese sauce) over the top after it’s baked to add moisture. When reheating leftovers, sprinkle a tablespoon or two of milk over the portion and cover it tightly with aluminum foil or plastic wrap before warming in the oven or microwave. This helps steam the casserole and reintroduce moisture, preventing it from drying out further. For future bakes, ensure you don’t overcook it, as overbaking is a primary cause of dryness.
Creative Substitutions for Your Breakfast Casserole
Remember, when it comes to customizing recipes, you absolutely don’t need to be afraid to get creative! This sausage and crescent breakfast casserole is a fantastic canvas for incorporating ingredients that perfectly suit your taste preferences or dietary needs. Make it truly your own!
-
Meats: While breakfast sausage is classic, feel free to switch things up! Try crispy crumbled bacon, diced cooked ham, or even shredded cooked chicken for a different flavor profile. For those seeking plant-based options, vegetarian meat alternatives like plant-based sausage crumbles or finely diced smoked tofu would also work wonderfully, providing a hearty and delicious substitute.
-
Cheeses: Don’t limit yourself to just cheddar! Experiment with various types of cheese to find your favorite. Mozzarella offers a mild, stretchy melt, while provolone adds a slight tang. Monterey Jack is another great melting cheese, and for a more sophisticated flavor, consider adding a sprinkle of crumbled feta or goat cheese after baking for a fresh burst.
-
Vegetables: The sky’s the limit when it comes to veggies! In addition to onions, mushrooms, and bell peppers, consider adding fresh spinach (wilted first), finely chopped zucchini, diced green chilies for a kick, or even some leftover roasted sweet potatoes. As long as the overall measurements remain similar, you are good to use whatever fresh or leftover vegetables you like. Just be mindful of high-moisture vegetables and consider sautéing them briefly before adding to the casserole to prevent sogginess.

Expert Tips & Tricks for the Best Breakfast Casserole
Elevate your sausage and crescent breakfast casserole with these handy tips and tricks, ensuring a perfect bake every time and making your life a little easier!
-
Utilize Leftovers: Planning ahead can save you time! If you have leftover cooked sausage from another meal, don’t let it go to waste. It’s perfectly suited for this easy breakfast casserole recipe, cutting down on your prep time significantly.
-
For a Creamier Texture: If you prefer a richer, creamier casserole, try adding about 2-3 ounces of softened cream cheese to your beaten eggs before pouring them over the other ingredients. Whisk it in thoroughly until smooth for an extra luxurious mouthfeel.
-
Boost the Flavor Profile: A pinch of garlic powder added to the eggs or the sausage mixture can significantly enhance the savory depth of your casserole. Other fantastic seasonings to consider include onion powder, a dash of smoked paprika, or a sprinkle of dried Italian herbs for an aromatic twist.
-
Add a Pop of Spice: For those who enjoy a bit of heat, drizzle a touch of your favorite hot sauce over individual servings. A dollop of salsa, a spoonful of sour cream, or even some sliced jalapeños (added before baking) can also provide a delightful spicy kick.
- Meal Prep Perfection: This casserole is fantastic for meal prepping! Once baked and cooled, cut the leftovers into portioned squares. Wrap each piece individually in parchment paper, then place them in an airtight container or freezer-safe bag. Store in the fridge for quick breakfasts or freeze for up to three months. Reheat in the microwave for a minute or two, or in a toaster oven for crispier edges. Breakfast meal prep solved!
- Serve for Dinner: Don’t limit this delicious dish to just breakfast or brunch! This hearty casserole makes an excellent and protein-rich dinner. Pair it with a simple green salad dressed with a light vinaigrette for a balanced and satisfying evening meal.
- Avoid Overcrowding: When browning your sausage and vegetables, ensure your skillet isn’t overcrowded. Cooking in batches if necessary allows for proper browning and prevents steaming, which can lead to less flavorful results.
- Check for Doneness: The best way to know if your casserole is fully cooked is to insert a thin knife or toothpick into the center. If it comes out clean, your eggs are set and the casserole is ready.
