For those unfamiliar, it’s a culinary challenge where participants are given a core ingredient and tasked with creating something truly fantastic. This month’s star ingredient? None other than HONEY! There was absolutely no hesitation on my part to jump into this round. As a true admirer of honey, I knew this challenge was right up my alley and offered endless creative possibilities for a sweet and savory dish.

My appreciation for honey runs deep, especially thanks to a special connection. I have a wonderful cousin who lives in Nicolaus, California, and her property is home to bustling honey bees. A skilled beekeeper friend periodically harvests the golden nectar, and my cousin generously shares bottles of this exquisite, raw honey with me. It is, without a doubt, the most incredible honey I have ever tasted. Its rich flavor and pure quality make it an indispensable ingredient in my kitchen, used in everything from marinades to desserts. This challenge gave me the perfect excuse to showcase its versatility and distinct character.

The idea of that perfect sweet heat sauce, coating crispy fried wings, sounded like pure culinary magic. I knew immediately that this was the dish I had to make for the challenge. Ingredients

  • 2 pounds chicken wings and drummies
  • 1 cup flour
  • 2 Tablespoons oil
  • 1 medium sized onion minced
  • 4 garlic cloves minced
  • 2 Tablespoons rice vinegar
  • 2/3 cup Sriracha sauce
  • 1/2 cup honey
  • Oil for deep frying

Instructions

  • Prepare the sauce: Heat the oil in a saucepan, on medium heat. Add onions and garlic and cook until tender, stirring often. Add in rice vinegar, Sriracha sauce and honey, bring to a low boil. Simmer for a few minutes and then remove from heat. Cool slightly. Blend with a stick blender until smooth.
  • Prepare your wings: Wash the wings and dredge them in flour. Shake off the excess flour and deep fry them in 350F oil for about 8-10 minutes. I didn’t use my deep fryer — I pan fried them in about 2″ of oil for 4-5 minutes per side.
  • Place wings on paper towels to remove any excess oil, then toss them with the honey Sriracha sauce.
  • Serve with dressing and celery if desired.
