The Star Ingredient: Frank’s Kraut

At the heart of any great Reuben dish is quality sauerkraut, and for that, I always turn to Frank’s Kraut. Their sauerkraut is consistently fresh, tangy, and provides that authentic, vibrant flavor that truly elevates a Reuben. I’m particularly fond of their convenient 2-pound poly bags. They ensure I always have plenty on hand, and I love the flexibility of being able to store them in the freezer. When I’m ready to cook, I simply thaw out what I need, and any leftovers go straight into a mason jar in the fridge, ready for my next sauerkraut-inspired creation!

Why Reuben Totchos are Superior to Traditional Nachos

I’ve always been a fan of creative food fusions. I’ve seen countless recipes for “Tatchos” (Tater Tot Nachos) and various Sheet Pan Nachos, but I realized there was an opportunity to combine these brilliant concepts with the beloved components of the classic Reuben Sandwich. And thus, Reuben Sheet Pan Totchos were born! This innovative appetizer is so satisfying, it could easily double as a complete meal.

What sets these Totchos apart, and what I truly adore about them, is that you get an explosion of yummy goodness in EVERY. SINGLE. BITE. Have you ever ordered nachos at a restaurant, only to find they’re poorly layered, leaving you with nothing but plain chips after you’ve eaten the top layer? It’s always a disappointment, a real “wah-wah” moment.

It’s a uniform layer of deliciousness, meticulously crafted just for you and your guests. Every forkful (or hand-scoop!) delivers that perfect balance of textures and flavors, from the crunchy tots to the tender meat and gooey cheese. No more plain chips, only pure, unadulterated nacho bliss!

Gather Your Ingredients for the Best Appetizer EVER!

Just look at all this incredible goodness, poised to be transformed into the most talked-about appetizer you’ll serve all season! Making these Reuben Sheet Pan Totchos is surprisingly simple, requiring just a few key steps and a handful of quality ingredients. Let’s walk through the process to create this ultimate snack.

Reuben Sheet Pan Totchos (Tater Tot Nachos)

First, you’ll want to preheat your oven to the specified temperature to ensure your tater tots get perfectly crisp. Line a large baking sheet (often called a cookie sheet) with parchment paper. This step is crucial for easy cleanup and preventing the tots from sticking. Once lined, spread a generous 32-ounce package of frozen tater tots out in a single, even layer across the parchment paper. Baking them in a single layer ensures maximum crispiness, which is essential for a great totcho base. Pop them into the oven and bake according to the package instructions, until they are golden brown and delightfully crunchy.

Once your tots are baked to perfection and crispy, it’s time to start building the Reuben magic! Remove the pan from the oven. Evenly distribute about a heaping cup of thick-sliced deli corned beef, cut into small cubes, over the hot tater tots. The warmth from the tots will begin to gently heat the corned beef, infusing the dish with its characteristic savory flavor.

Next comes the tangy counterpoint: Frank’s Kraut! Add about 1/3 cup of Frank’s Kraut, making sure to squeeze out any excess liquid beforehand. This step is important to prevent the totchos from becoming soggy. The vibrant acidity of the sauerkraut cuts through the richness of the corned beef and cheese, creating that signature Reuben balance we all love.

Now for the cheesy crowning glory! Top the corned beef and sauerkraut with a generous blend of cheeses: 1 1/2 cups of shredded Swiss cheese and 1 cup of cheddar jack cheese. The Swiss offers a nutty, creamy depth, while the cheddar jack brings a sharper, more familiar nacho-like meltiness. Combining these two creates a complex and utterly delicious cheese layer.

Return the sheet pan to the oven and switch your oven to a high broil setting. Keep a very close eye on it, as the cheese will melt and bubble quickly under the broiler. Remove the pan as soon as the cheese is fully melted and lightly golden in spots – you don’t want it to burn! Finish by sprinkling sliced green onions over the top for a fresh, mild oniony bite and a pop of color. Serve these incredible Reuben Sheet Pan Totchos hot, with plenty of creamy Thousand Island dressing on the side for dipping or drizzling. Don’t wait! Grab that leftover corned beef, or swing by your favorite deli today, and whip up this sensational appetizer!

Ingredients

  • 1 32 ounce package frozen tater tots
  • 1 heaping cup of thick sliced deli corned beef cubed
  • 1/3 cup Frank’s Kraut squeezed dry
  • 1 1/2 cups Shredded Swiss cheese
  • 1 cup cheddar jack cheese
  • 1/2 cup green onions sliced
  • Thousand Island Dressing for serving

Instructions

  • Preheat your oven to 425°F (220°C). Line a large cookie sheet with parchment paper to prevent sticking and make cleanup a breeze.
  • Spread the frozen tater tots in a single, even layer over the parchment paper on the baking sheet. This ensures they all get equally crispy. Bake according to the package instructions, typically for 20-25 minutes.
  • Once the tater tots are golden brown and perfectly crispy, remove the sheet pan from the oven.
  • Evenly distribute the cubed corned beef and the squeezed-dry sauerkraut over the hot tater tots.
  • In a small bowl, lightly toss both the shredded Swiss cheese and cheddar jack cheese together. Sprinkle this cheese mixture generously over the top of the tots, corned beef, and sauerkraut.
  • Turn your oven setting to High Broil. Place the sheet pan back into the oven, keeping a very close watch. Broil just until the cheese is beautifully melted and bubbly, and slightly golden in spots (this usually takes only 1-3 minutes). Remove immediately to prevent burning.
  • Sprinkle the sliced green onions over the melted cheese. Serve the Reuben Sheet Pan Totchos hot and fresh, with plenty of Thousand Island Dressing on the side for dipping or drizzling. Enjoy!
